Sundays are for brunching (but not for splurging)

After trying my hardest to sleep in (though my weekday real world schedule has pruned my sleeping habits to make 8:15 a.m. mean "sleeping in"), I decided to get up and make a glorious Sunday brunch.

I use the term "brunch," even though it was still breakfast-time, because this huge morning meal lasted me all the way to dinner... I didn't even have to eat lunch!


Although I currently do not live in a big city with brunch culture, I have noticed the weekend morning ritual of going out for brunch among my fellow 20-somethings. I have looked up certain brunch specials and found the prices to be crazy! Especially for such a relatively easy and flexible meal.

Breakfast is the most important meal of the day... and foods like pancakes, waffles, french toast, and eggs are easy to make and get creative with, at a cheaper price than what you can get by going out every weekend morning.

This morning, I looked in my refrigerator and found kale, spinach, feta, an onion and a gorgeous orange pepper... and thus, this beautiful brunch was born!

  1. That's a healthy meal for sure. I find it hard to eat healthy these days because of my busy schedule. But if I don't start now, I might have health problems later.
